Friday Dinner Idea – parmesan chicken wings

Looking for a simple chicken recipe the whole family will love?  These parmesan chicken wings have always been a favourite in my house and they are very simple to make.  Serve with a fresh salad as a side, they are rich enough on their own that I find a starch isn’t necessary.

What you will need:

  • one pack of chicken wings (you can use any kind of chicken really, cut up chicken breasts to make these nuggets or use drumsticks, a favourite with kids!)
  • 1 cup of breadcrumbs
  • 1 tsp Italian seasoning
  • 1/2 cup of parmesan cheese
  • 2 eggs

Preheat oven to 425. Mix breadcrumbs, seasoning and parmesan cheese in a shallow bowl.  In another shallow bowl, lightly beat eggs with a fork.  Dredge chicken in egg, then in dry mix.  Place chicken on a foiled lined baking sheet (I also lightly grease the tin foil to give a little more protection against sticking).  Put in oven for 15-20 minutes.

That’s it!  A great alternative to take-out chicken.  🙂
