Food Friday – Salmon!

Made this a few days ago and just had to share.  It was so easy to make and turned out amazing!  If you like fresh salmon, you know that moisture is key.

Normally I cook my salmon in wine but I had a bottle of coconut water in the fridge and thought I’d give it a try.  Absolute success!!


My husband absolutely LOVED it.  Paired with a veggie salad, you may notice the lack of starch.  We aren’t cutting them out completely yet but have significantly cut down on them… and to our surprise, we are still full at the end of our meal.

Okay, so what you will need:

– Fresh Salmon

– Fresh Dill & Parsley, chopped

– Coconut Water (about 1/2 cup)

– Lime juice (I used about 1 tbsp)

That’s it!!

Preheat the oven to 350 degrees.  Lay the salmon on a large piece of tinfoil in a pan.  I bent the sides of the tinfoil up to make a sort of bowl/boat so the liquid wouldn’t spill out.







I then added the coconut water over the salmon, then the lime juice.  I covered the salmon with a generous amount of dill & parsley.


Then I folded the tin foil together to make a tent.  Put it in the oven and cooked for approximately 20 minutes, however this will depend on how thick your cut of salmon is.  Definitely check it after about 15 minutes.  It should flake easily with a fork in the thickest part of the fish when it’s done.  Be careful not to over-cook though – it can dry out easily.


Serve immediately with whatever side dishes you want.   Rice goes well with fish but we love a good veggie salad!  🙂  Enjoy!
